For a lot of people, breakfast is the meal that gets rushed. It’s something quick and sweet, often from a package, eaten on the way to somewhere else. That’s understandable, since mornings are busy. But the first thing you eat shapes the rest of the day, from energy and focus to how you feel by mid-morning. That idea guided every decision behind Aubergine Kitchen’s new breakfast menu.

Breakfast is also where restaurants tend to take the most shortcuts. Pastries arrive pre-made, drinks start with syrups, and a lot of what’s sold as “healthy” is really just sugar with a better label. At Aubergine, breakfast is held to the same standard as everything else on the menu. The multi-seed whole wheat sourdough is baked in house. The açaí is organic and sourced from Brazil, and the eggs are pasture-raised. Everything is sweetened with fruit instead of added sugar, nothing is fried, and nothing is cooked in seed oils. These choices take more time and effort, and they’re the reason Aubergine exists.

What’s New on the Menu

The Jeweled Muhammara Toast starts with housemade sourdough spread with muhammara and walnut pesto, topped with soft-boiled eggs, dukkah, pomegranate seeds, green onion and microgreens. It’s savory and bright, and it keeps you full well into the morning.

The Mediterranean Egg Toast layers sunny-side-up eggs over hummus and cashew dressing, with mushroom, cherry tomato, kalamata olive, coconut bacon, caramelized hazelnut and pomegranate. For something a little sweeter, the Almond Orchard Toast pairs almond butter and housemade granola with fresh strawberry, blueberry jam, pistachio, pomegranate and mint.

Two new açaí bowls round out the menu. The Nutty Choco Açaí and the Protein Açaí Bowl both start with organic Brazilian açaí, housemade granola and fresh fruit, and the protein bowl adds whey protein for mornings that call for a little more. Select locations also offer Overnight Oatmeal: coconut overnight oats with housemade granola, blueberry jam, fresh strawberry, banana, almond butter and caramelized hazelnut.

A good breakfast isn’t about counting calories. It’s about what the food gives you. Real eggs bring protein, nuts and olive oil bring good fats, and whole grains and fruit bring fiber.
