Eating fruits and vegetables that are in season is the best way to get the most nourishment from them. That’s why we made it a priority this summer to provide you with locally sourced items on our menu that you can enjoy and reap the benefits of! Asparagus and peaches are now on the menu and we couldn’t be more excited about it.
Asparagus:
When we think of summer vegetables, we definitely think of asparagus. This funny little vegetable is native to Africa, but is grown all over the world. Its peak harvesting season is in the spring, which is why it’s a common food consumed in the warmer months of the year.
Asparagus has so many health benefits, there’s almost too many to talk about. Like many green vegetables, asparagus contains folate. This vitamin is vital for fetal development in pregnant mothers, but can also be a mood booster in everyone! It also has vitamins K and E, which are essential vitamins for bone health and calcium absorption and strengthening the immune system. And let’s not forget the fiber! It’s amazing for gut health and it keeps you feeling full for longer!
At Aubergine Kitchen, we love to serve our asparagus roasted in extra virgin olive oil and spices, served on the side of a main course or part of a delicious bowl.
Peaches:
So, we talked about our favorite summer vegetable, but now we need a shout-out for the summer fruits! There are so many juicy, tasty, summer-time fruits out there, but one of our favorites is peaches.
Peaches have tons of vitamin A and C, fiber, and natural sugar that we need to fuel our bodies and give us healthy energy. Vitamin A is beneficial for our eyes, our skin, and our immune system.
And let’s not forget about the antioxidants that peaches have! Our bodies are exposed to lots of toxins and chemicals in the environment as we go about our day. Antioxidants help our body to detox and fight off the toxins that could cause damage to our cells.
This summer, we’re bringing in the peaches with our Peach & Goat Cheese salad– a delicious combination of whole ingredients that will leave you feeling satisfied and summery.
