our mission:
changing lives with real food.

eat better, feel different
Our mission is simple: to nourish and empower people through real, whole foods. What started as a personal health journey grew into a commitment to help others eat, feel, and live better. We’ve seen firsthand the life-changing effects of clean, nutrient-rich meals. We believe that food is medicine. It has the ability to transform, to energize, to bring life. And we believe that eating well shouldn’t be complicated. It should be simple, accessible, and delicious.
our story
When our family moved from Brazil to the U.S., we arrived full of hope for new opportunities, but quickly noticed something was missing. There was nowhere to eat out that aligned with how we had always nourished our bodies. The food was different; heavily processed, full of sugar, lacking vital nutrients, and didn’t leave us feeling good or energized. We searched for a place that prioritized real, whole ingredients. When we couldn’t find one, we created it ourselves. That’s how Aubergine Kitchen was born.

Elcio & Mirian Zanatta, Founders
a commitment to quality
When we opened, we were told to cut costs on ingredients to stay profitable. But we believed that staying true to our values was the only way to build something lasting. High-quality ingredients may be harder to source and cost more, but we never compromise. Our customers may not see these ingredients, but we believe they feel them. We experienced that difference ourselves, and wanted it for our community. These aren’t tough decisions to make. We made them once and they will never change.
